... with proper preparation, yes.
They have a series of 'y' bones embedded in the fillet.
The best method is to use a spoon to scrape the meat away from the skin and bones then boil and use to prepare 'fish cakes'.
They are probably the most prevalent gamefish in the surfzone from June thru late August.

I wouldn't eat the nasty things,but they are fun to catch,,course I don't eat mullet,pinfish,hardheads,or other things coyotes won,t eat either!

If a flounder thinks it can ambush a tasty treat, it will. I've caught them on mirrorlures before---not that I'd go searching for flounder with gotchas and mirrorlures, but it can happen, just like me catching a king every month or so. ---When the moon is in the seventh house.

I didn't realize how aggressive a flounder could be until I saw the underwater footage on the John skinner YouTube videos.

While inshore fishing, I've had flounder come 3' up off the bottom to grab a lure.

Well, after several hours making phone calls, I was able to track down a certain manufacturer’s service center in California. Thankfully, they agreed to send out my needed parts. These were left over...
