    I got PMs on the Ladyfish, but just letting you guys know I have been pulling 18+ hour shifts at work and have had no chance to type down the process and recipe yet. I haven't forgotten about you, I promise. Will get it for you once this work dust settles.

    New to saltwater fishing but I fried some red fish that I caught and man was it great. I was not sure how it would turn out because a guy at work called them trash fish and says he never keeps them but after I tried them none I catch will ever go back to the water just the hot oil.

    I have to disagree VG?? Specks are mucho better all things considered. Easy to clean. Fry them up fresh or make sevichi (sp?) out of them. No troubles. Bigger redfish such as the ones comonly caught off the pier are difficult to clean, have a large bloodline in them and are all in all more trouble to deal with. However you are much more likely to catch a red than a speck right now. We have to play the hand we're dealt.

    Although king macherel are a hoot to catch, I don't care to eat them much. They're a bit fishy for me. Best way I've had them is wrapped up in foil on a charcoal grill with a little bit of smoke flavoring and some barbeque sauce of your choice. Add some onions and garlic for extra flavor...really good (it surprised me)

    To me, spanish macherel don't have near the fishiness that king do although I'm sure some will dissagree. They're usually more abundant and easily caught on a "Gotcha" rig or a "Bubble" rig. Not much blood line to deal with and wonderful grilled or broiled with some lemon, butter and thyme.

    Of course. if you're lucky enough to catch a cobia, a flounder or a pompano, in my opinion, they're all better table fare than the above mentioned. It's hard to mess up cobia, but I have to say that my favorite way to cook it is to marinate it in rosemay vinegarette and then baste it in tiger sauce as you cook it on the grill. (Don't overcook).

    Forgot to mention that I give croaker a :headbang: on table fare. Actually better than a redfish if you can catch one big enough to fool with. Right there with sheepsheads for taste. Also, whiting are one of the best tasting, most abundant and easily cleaned fish in the surf zone. All you need is some dead shrimp and the right rig to catch them and you're only a day or two from a nice fish fry for the family.

    Fins n fur, im comparing taste rather than ease of cleaning. I prepare both in similar fashions, and to me neither tastes much better than the other unless fried, then redfish comes out better than speck. When stuffed and baked, speck is better. Smoked or grilled, they are about the same, therefore i tied them up. Primary difference is texture, where redfish is just more dense.

    Redfish are easily cleaned if you know the sweet spots. Hit me up some time and i'll show you some short cuts (no pun meant) first hand.

    FRIED MULLET BACKBONE !WE INTENTIONALLY BUTCHER WHEN FILETING THEN EAT IT AS SOON AS IT COMES OUT OF THE GREASE.EAT THOSE LIKE YOU WOULD A RIB JUST DON'T BURN YOUR TONGUE;THEN YOUR FILLETS LATER.HAVE TO EAT FRESH;NO FREZZING .COBIA BECAUSE I LIKE TO GRILL IT .WHITING ,IT TAKES SO MANY OF THE LITTLE JOKERS THOUGH.FLOUNDER BECAUSE MY MAMMA KNOWS HOW TOO STUFF IT.CANNOT LEAVE OUT THOSE FRESHLY FRIED SPANIARD FILLETS.MAN ,I GETTING HUNGRY!

    I was actually talked into it by a buddy and fellow forum member and was quite suprised. Never in my wildest dreams would I imagine it would taste that good.
