New take on fried fish batter
If you like fried fish, try this: Jiffy Corn Muffin Mix. Tired to paying $2+ for boxed batter?... Jiffy is 0.50¢. The mix is corn meal and a little sweet, but add 2 table spoons sugar per box. Heat a black skillet with real butter and small amount of oil, get it a little on the hot side. Dip fish in milk/egg wash then in sweetened Jiffy mix. Added to a hot skillet caramelizes the batter making a thin crisp sweet coating. :headbang:
