Japanese-Style Poached Redfish
This works great with redfish fillets, even bullreds. Works on big snapper fillets too.
Simmered Fish Recipe
INGREDIENTS:
• 1 Large redfish fillet, skin off.
• 1/3 cup sake
• 1/2 cup water
• 4 tbsp soy sauce
• 1 tsp sugar
• 2 tbsp mirin (sweet cooking sake)
• 1 tsp grated ginger
PREPARATION:
Put water, sake, soy sauce, mirin, ginger and sugar in a large sauce pan and bring to a boil.
Add fish in the pan and simmer for 10 min. on medium heat.
Remove from heat and let rest for about 5 minutes.
Serve
