Grilled Spade Fish
Didn't realize these fish were any good to eat until I invited my dad to come fishing with me to the pier one day. He saw them swimming around and said he had eaten them before and they were really good. So when I finally caught a few for myself I tried them and they were great. This has been the only way I have cooked them because I love them this way. When you clean them just scale them and remove the head and guts.
Take your cleaned Spade Fish rub with Prudhommes Blackened Rdfish Magic then coat with oil. Place on a grill with medium heat. Cook first side for about 3-4 minutes then flip. Close lid to grill and cook fish for another 4-5 minutes. Then presto! you're ready to eat! The char that the fish gets on the grill gives it an awesome flavor. I have a gas grill, but these would probably be best on a charcoal grill for that added smokey flavor.
