Crab meat stuffing for flounder etc.
1 cup Crab Meat
1/4 cup diced bell pepper
1/4 cup diced celery
1/2 cup diced onions
3 cups bread crumbs or 3 cups crumbled cornbread whichever you prefer
2-3 Tbl seafood seasoning of your choice
2 eggs beaten
2 Tbl Sugar
Sautee off your vegetables in a pan till the are cooked through then cool.
Place Crumbs in a bowl.
Add crab meat, veggies, seasoning, and sugar then mix together.
Mix in egg then you are ready to stuff away.
You can use this to stuff anything. If you are using a sweeter cornbread you can omit the sugar. This sugar just gives it a little extra something. if you want a moister stuffing add another egg or a little water and if a little drier omit one egg. This is just a basic recipe and you can make your on variations.

Other than frying, this is the only way I cook flounder and it is so good. My ingredients are a little different, for the stuffing I use:
1 1/2 tablespoons butter
3 green onions
1 clove garlic, minced
1 small sweet pepper
1 egg
1/8 teaspoon cayenne pepper
3 tablespoons heavy cream
1 1/2 tablespoons spicy mustard
1/2 lime, juiced
2 tablespoons mayonnaise
10 saltine crackers
8oz lump crabmeat
melt the butter and saute the onions, garlic, and pepper
then mix all the ingredients together. I take whole(headless) flounder and butterfly the top then add the stuffing. Bake in the oven for 20min. on 325 degrees, and then broil the top for another five minutes.
If you don't want to pay high prices for crab meat, just get you a cheap crab trap and go to Little Lagoon...that's where I get all my crabs for this recipe.

Great recipes;my allergy to green bells and the price of crab meat;makes me do some substituting.The crab is replaced with shrimp(mixed in raw,the flavor is transfers in the mix as it cooks)and it is firmer than the crab.If shrimp is to much trouble try a can of stems and pieces mushrooms as your sub.The bells, I discovered was a problem eating Ms Pats mack salad about 35 years ago;so for some zing I add jalapenos instead.Another thing I add is sunflower seeds or pecans for additional texture and flavor.I know with out the crab it isn't crab meat dressing but if your are stuffing a flounder or using it to stuff other fish or as a side these subs are easier on the pocket.With the amount of work it is to pick a pound of crab meat it is cheaper to buy it.
