From back in the late 70's and early 80's on the Trysler ground, snappers and beeliners were getting so hard to find that we were predicting that squirrelfish would be the target fish of the future. They have pretty, white meat but just not much of it. I tried it and It was just fine.

A couple of times I've cut up lizard fish for bait and seen that they have fine looking meat also, but I've not tried it.

I've eaten squirrel fish and it was good.
Last time I went on a Snapper charter I kept everything everybody didn't want, plenty of squirrel fish.
IIRC, sauteed in butter with salt, then added some Rotel... Yummy.

I've eaten a few of the biggest lizard fish I've caught -- tasty. Lots of little bones if that slows you down though.
