Pomp fillets in the oven: pics
So, I'm back here in Bham wishing I was down in Orange Beach. I thought I would post some pics from a meal I cooked last week while I was down there. Kept two nice size pomps off the beach and had a real nice meal for me and the wife.
- Soaked briefly in melted butter and olive oil
- on half I used "seafood majic" seasoning and half I used lemon pepper/dill
- cooked on a broiling rack at 400F for a few minutes
- squeezed a whole lemon over the fillets.
- yellow rice and veggies
- white wine

I gutted mine, scored with a fillet knife, dusted with paprika, salt, a squeeze of lemon and added butter. Wrapped in foil and cooked in a fish basket over my camp fire. I think I have a new favorite fish... Or at least a new fish to add to my list of favorites.

IMNHO, you used way too much seasoning. Pompano have a wonderful flavor of their own---why do you think they are so highly prized? They only need a little accent seasoning to compliment their excellent flavor, not like snapper and grouper that are so mild that you have to spice them up. Cobia, triggerfish and amberjack are a few other fish that have a distinct and delectable flavor. Fresh bluefish with all the red removed are in that category, too. Too much seasoning on a pompano is like smothering prime rib in hot sauce and ketchup, or dunking lobster in thousand island dressing with red pepper.
Of course some folks like it where they can't taste it. Takes all kinds.

I prefer my Pomps cooked whole and simply seasoned.
Some butter or olive oil, generously salted, maybe a dash of garlic and a squeeze or two of lemon or lime.

Olive oil or butter, hot skillet, salt, pepper and fresh lemons. Good grief, lets eat!

If I call my wife and tell her I'm bringing home pompano, she's liable to have most of her clothes off before I get there! She likes them more than I do, if that's possible.

Well, after several hours making phone calls, I was able to track down a certain manufacturer’s service center in California. Thankfully, they agreed to send out my needed parts. These were left over...
You would think I would know this!
