missing the salt already
I sure am missing the salt already :boohoo: :fishing:[img width=61 height=50]http://i40.tinypic.com/2en2qyx.gif[/img] ....I sure am glad I don't have to wait till next spring break with the grand kids to get my fix :fishing: :yippee: ....but June won't come soon enough for me

Bill,
great couple of trips on the purple boat you had when you were down here (and heck of a king you caught on the pier too)...see you when you get back down. If you need an extra recipe for the wahoo, try this...
2-4 wahoo steaks 1-1.5 inches thick
1/2 or so cup olive oil
1 pack McCormick fajita seasoning
1 lime
1 jalapeno
some fresh cilantro.
put the wahoo in a ziplock, chop the jalapeno....in a bowl, mix the olive oil, fajita seasoning. jalapeno, squeeze the lime juice in there. mix well....pour the mixture over the wahoo in the ziplick and let marinate for at least a couple of hours.
heat your grill...throw the wahoo on there....you want it seared on the outside...but don't overcook....flip...sear without overcooking. garnish with cilantro. enjoy.

Thanks Fiver!!! only had it once in a restaurant and wasn't impressed with it too much....said that days catch.....but who knows....over in Panama CityBill..............
