Salted fish inside and out, with sea salt. Peppered, the same way. Stuffed with crab stuffing, from publix sea food market. Cooked on med-hi, for a couple minutes, in butter. Then placed under broiler, mid ways down in oven until done.

That sounds similar to my method. I also have used the crab stuffing from publix but then I chop up two or three ounces of peeled raw shrimp into very small pieces and mix with the crab stuffing before putting it inside the butterflied flounder. I also chop up garlic finely and add to the mix. I then spice it up a little extra with Cajun seasoning. I never received any criticism after the meal.
