Simple Spadefish Dinner
For one person a single plate size spade fish fileted.
Cut the red streak out of the center of the filet and throw it away.
Cut the spadefish filets into about 1 inch strips.
Cover in Buttermilk.
Mix flour (1/3) cornmeal (2/3) and salt and pepper.
Take one medium Potato and scrub it leaving the skin on.
Slice the potato into small linear strips and fry it, place on paper towels to drain.
Roll each piece of fish in the breading mixture and drop it in the deep fryer.
Do not put more than 6 or 7 pieces in at the same time.
Watch it carefully because it will brown quickly, remove it and drain on paper towels.
A sliced lime squeezed over it to taste if you like that.
Serve with a bowl of cole slaw and your favorite beverage.
30 minutes from start to finish and a very satisfying meal.
I’ll be sliding into town March 10-14. Can you have it warm and sunny for me then? And also, how about having the fish biting??? :D
