    Really good deer

    I would have titled this "The best deer ever" but it wouldn't fit in the title box. Simple but Oh so good and have had people tell me it was the best deer meet they ever ate.

    Soak 1" backstrap cubes in salted ice water over night (good idea with any deer).
    Remove and rinse. Marinade in SBR for a day.
    Wrap with bacon and secure with toothpick.
    Smoke (I prefer apple wood) for 1 hour at 250 degrees or until bacon in done. This cooks deer a little longer than I usually do but it works .

    Eat right out of the smoker or are fine as a chilled appetizer.

    Also works with little smokies (I couldn't find the deer chunk picture)

    Have done the same with wild hog chunks and is succulent!

    That looks so good. I will smoke all kinds of meat wrapped in bacon.
