Ray a' la skillet , ray fajitas.
Well, you'll never tell the difference between a ray and cheap Mexican fajita steak if you follow this recipe.
Filet 1 large ray(wings ) , separate the skin and cartilage from the meat as best you can, put thin strips of meat in a bowl. About 1/3"x2" strips.
add a touch of Lea and perrins worcestershire in The bowl to marinate. Add some garlic powder, black pepper, and toss in a warm skillet.
Serve piping hot.
I like mine well done wrapped on a tortilla with refined beans and rice. It's just like steak fajitas.

I'll have to try that.
Wonder if that recipe would work for remora strips and other "underutilized" species as well? lol

Ignorant Northerner here, what size ray is best? Are they like other fish where small-midsize is preferred? Definitely would want to try one as its all I've been able to catch from the surf.

Ignorant southerner here.... I find the best size to be the ones I catch... lol. I Would Prefer the slightly larger ones being they have more meat between the cartilage. I guess mine was 25 or so lbs. And I have a few nice quart bags of filets. The y have a rather tough rib cage and it's a bit tricky to do a pretty job at first but you'llfigure it out. Sorry for typos. Trying to use my phone

Mr. Cleland thanks! We rarely get skate let alone ray up here in Illinois due to how fast it breaks down. If I catch one I just might have to try it when I'm back down there (Early August!!!)

Yah... I'm from Illinois so would have no clue either.. might have to bug you about help as well haha! Once you fillet them how long do they have before turning? Ive been told its a lot quicker than other fish.
