    Poisson En Papillote(Fish In Parchment)

    Poisson en papillote(fish in parchment) is a very classic way of preparing. it also very easy to do. The basis of the dish is just vegetables and fish baked in a parchment paper pouch. Im sure in a pinch you could probably use foil for this recipe, but is probably best using parchment paper which you can find next ti the foil and plastic wrap at most grocery stores.

    The best part of this dish is that you can use any fish you wish, whole or filleted, and any vegetables that you wish. It is all about using what you basically have on hand and what you can find fresh at certain seasons through the year. To prepare, simply cut a circle out of a piece of parchment paper big enough to hold fish and vegetables. Fold circle in half so you have folding line to which on one side you will place your vegetables and fish. Cut your vegetables, lets say zucchini, yellow squash, broccoli, and cauliflower since that is in season. Place in a bowl and toss with a little salt, pepper, and dry/fresh herbs of your choice(My favorite being basil and thyme). Place in one half of the parchment paper. Next take your fish and season as you wish. Place fish on top of vegetables. fold other half of parchment paper over the fish and crimp edges to seal the pouch you have formed. You can now place the pouch on a greased baking sheet and bake in a 350 degree preheated oven. Depending on the kind/thickness of the fish, it will take anywhere from 10-20 minutes to cook. Then you are ready to eat. Simply cut an x into the top of the pouch to open, but watch out for steam(and a nice burst of aroma)! This makes one serving(1 pouch).
