Mesquite smoked pompano and sheepshead
I saw the post about Harley's birthday and remembered the awesome smoked fish he brought to the pier. I grabbed some pompano and sheepshead out of the freezer and smoked them. Just sprinkled a little Tonys and they are awesome. I could kick myself for not trying it sooner.

They look delicious, chillinfish! I'm always open to new ways to prepare fish. Thanks for that suggestion!

You are THE MAN. I didn't know there was any such thing as pompano that made it to the freezer. I know you did well with the pomps earlier, but that is unheard of. If you aren't careful, I'll be following you around like a lost puppy next spring, trying to pick up your cripples and steal all your secrets, whining and begging the whole time.
Mesquite smoked pompano---that's like gold-plated diamonds.

I did the first pomps (donated) with apple wood.....darn fine eating, but didn't loose my wifes cloths....maybe next time, they were gone quick from the plate.....still have 2 left......thanks Mr. Wire
Lightly sprinkled with Tony's is always a good choice (grilled)Bill..............

I’ll be sliding into town March 10-14. Can you have it warm and sunny for me then? And also, how about having the fish biting??? :D
