Kentucky Bourbon Derby Pie
Crunchy Crust:
1 1/4 sticks of salted butter
1 3/4 cups all purpose flour
2 - teaspoons sugar
3/4 - teaspoon salt
6 - tablespoons ice water
Mix all dry ingredients in a bowl. Cut cold butter into small cubes. Add butter a few cubes at a time mixing with dry ingredients with hands until all butter is used. Mix will be "crumbly". Add water a tablespoon at a time until mix comes together but isn't wet. Wrap in plastic and flatten to a 3/4" disc. Place in refrigerator for 30 minutes. Remove and roll out into a 9" glass pie dish. Perforate dough with fork. Turn oven to 350 F and place in preheating oven for 10 minutes while mixing filling.
Filling:
2 beaten large eggs
1 teaspoon vanilla extract
1/3 cup self rising flour
1 stick of salted butter-melted and cooled
1 cup sugar
2 tablespoons bourbon(optional)
3/4 cup semisweet chocolate chips
1 cup chopped pecans
Combine beaten eggs, melted butter, vanilla extract, flour, sugar and bourbon and mix thoroughly. Stir in pecans and chocolate chips. Remove pie crust from oven and add filling. Return to oven and bake at 350 F for 40 minutes and let cool. Serve warm with vanilla ice cream and chocolate syrup.
This is my first attempt at making a home made pie crust and it turned out awesome. Also my first try at the Derby Pie and it was just as good as what I have eaten at Simp McGee's and the first time I ate a whole piece without having to share it!
