    Homemade marinade

    What’s your fav marinade for grilling fish ?

    Never tried to marinate fish but know that citrus will cook it so if you make 1 don't leave it in there long,had grilled grouper in Melbourne Florida 1 time that had a sauce served with it that was outta this world,wish I knew how to make it

    Not so much a marinade as a basting sauce I call 1-2-3.

    I use two turning baskets to grill two one-gallon Ziplock bags of mackerel fillets.
    Melt a stick of butter in a bowl in microwave.
    Add 1 tsp garlic POWDER (not salt).
    Add 2 tsp lemon-pepper seasoning.
    Add 3 tsp ground parsley flakes.
    Stir and add 1/2 a beer (save the other half for later ;-)

    I use the teaspoon to ladle a bit on the fillets after turning.
    Helps to season and keep moist.
    The other half of beer keeps me moist ;-)

    Serve fish HOT off the grill, or let cool and crumble into chunky pieces for fish salad.

    Very seldom marinade fish, fresh fish doesn't need it.

    But I do baste with olive oil or butter, sometimes those get mixed with various herbs and spices.
    Sometimes they get cooked in a sauce.
    And sometimes topped with a nice salsa or chutney.
