Homemade Fish and Chips
Ok here's my recipe:
Beer Batter for fish:
2 Cups of Flour
1 12oz Beer of your choice (Better beers = better flavor)
1 teaspoon hot sauce
1/3 teaspoon salt (to taste)
1/4 teaspoon of pepper
A dash of garlic powder
When mixed together should be a a fairly thin but thick enough to stick.
Take filets, remove all skin and bones, dip in batter and let excess drip off. Fry in big pot of oil at 375 til golden brown on both sides.
Homemade Fried Chips:
Wash and peel a few potatoes, cut as thin as you can and soak in cold water for 5-10 minutes. Dry well on some paper towels. (So they don't pop so bad) No there's two ways to fry them you can do it in 2 stages for perfection but it takes longer. (fist you fry them for just a couple of minutes at around 250, then drain and let dry then you fry them fast at 375 til golden brown.) Or just fry it a little longer and its a bit browner. Fry til they are brown and drain on paper towels, salt them while still hot.
You can serve with tartar sauce, lemon butter or any sauce you like. Enjoy.
