Fried "Hefeweizen"-battered Grouper Fillets
Ingredients
Fish:
- Obviously you would need some grouper fillets
Beer Batter:
- 1 six pack of UFO Hefeweizen beer...You can use other craft/microbrews but it need to be something a bit stronger on the alchoholic content than your typical Budweiser.
- 1 box Zataran's seasoned fish fry
- 2 large eggs

Directions
- Break out the Fry-Daddy...plug it in and add desired amount of Peanut or Canola oil.
- Take one bottle of Hefeweizen, open and insert into mouth...drink responsibly.
- Cut Grouper fillets into desired size. I like to leave mine a little larger than most, perhaps the size of an index card.
- In a large bowl, pour in 1 bottle of the remaining 5 Hefeweizen. Pour 2 cups of Zataran's into the bowl, add eggs and whisk until evenly mixed. Pat fish dry and coat the fish in the beer batter. Dredge the pieces of fish in 1 cup of remaining Zataran's and slide into oil as coated. Fry fish, turning over frequently, until deep golden and cooked through, 4 to 5 minutes. Transfer to a paper towel-lined baking sheet or plate.
- Grab fish and remaining 4 beers and chow down...Boudin balls sold separately

I know, I know... it's simple and most people know how to beer batter fish but I wanted to highlight the difference in taste you get with the craft or microbrew beers. Plus, maybe some of our friends from out of town would like to try it...Last edited by Delta_Rods; 04-25-2013 at 03:50 PM.

For those who never served a hitch in Germany, "hefe" means yeast and "weizen" mean wheat. It is an unfiltered, cloudy beer whose main ingredient is, obviously, yeast, that has kicked the a@@ of many a young GI. Twas my first introduction to Deutsche bier and have some in my fridge right now. Definitely an acquired taste with an extremely distinctive flavor.
