Fish Salad on Ritz Crackers
I tried a new concoction for a neighborhood get together yesterday. Everyone around here kids me about all my fish dishes.
I created a fish salad that you spoon on to Ritz crackers and everyone that tried it liked it. Especially me.
One pound of boneless fish filets cooked for 8 minutes in boiling water with Liquid Crab Boil added.
Today's fish was black drum. (small about 3 pounds live weight)
Drain in a colander then use a fork to flake it up thoroughly.
Chop 1/3 of a sweet onion.
Chop 1/3 of a can of water chestnuts.
Chop one stalk of celery.
Chop 3 tablespoons of stuffed olives.
Add 2 heaping tablespoons of pickle relish.
Add enough mayonnaise to make it easy to mix ( about 3 generous table spoons full).
Squeeze juice of one lime into the mixture.
Add Cajun seasoning to taste as you stir the mixture.
Chill thoroughly and then serve the crackers on the side with a spoon in the mixture
so that everyone can add the desired amount to the cracker.
This avoids the cracker becoming soggy.

Made up a batch for the weekend was all gone first day. Family really liked it.
