Fish Sandwich
Ok here's a quick lunch sandwich you can make from whatever fish you have on hand. Mahi is probably my favorite but for this one I used some fresh spanish mackerel I had on hand. I do sort of a stove top blackening. I take my spanish fillets, rinse em, and toss 'em on a paper towel to dry. Then I season them liberally with some chef pauls seafood magic, a little salt, and a little cayenne for a little kick. Then I get a medium size pan and add just enough oil to keep the fish from sticking while cooking. (About 2 tablespoons.) On Med-High Heat and put the fillets in and give 'em about 2 minutes to get a good sear, then turn them and sear the other side for about a minute. Turn down heat to about medium, and let cook for about another 2 minutes or until they are flaky. Then I toss 'em on a paper towel or plate to rest and take my buns and put some tartar sauce on them. Put the fish on and serve with whatever side you want. (I used chips.) You can do this pretty much in whatever seasoning and fish you want. That's it, takes maybe 10 minutes if that.
