fish jerky
This is not a recipe, rather it's a request for one. I've made jerky from freshwater fish (pike) with a soy/pineapple brine and it was good. I'm just wondering if anyone has made jerky with any of the fish from pier or surf (and what brine they used). I'm especially curious if a jack or bonito would be good that way.

When i was in San Diego this summer tuna jerky was everywgere.

I made king mackerel jerky a few years back and thought it was too "fishy" tasting. Dale's and pineapple, but maybe not enough.
People are shocked to see sharks in the water around here.
If you see natural water taste it. If it's salty it has sharks in it. If it's fresh it has alligators in it. If it's brackish it has both.
I’ll be sliding into town March 10-14. Can you have it warm and sunny for me then? And also, how about having the fish biting??? :D
