I know this is a very old thread, but I'm smoking a couple of fatties right now. Thanks John for turning me on to "Smoking Meats Forum". This is my first time for fatties, so I made mine simple. Jimmy Dean sausage, stuffed with scrambled eggs, hash browns, Pepper jack cheese, wrapped with a weave of Hormel original bacon. If it don't give me a heart attack, I will let ya'll know how it goes.
Well the fatties turned out great! The stuffing ingredient possibilities are endless, whatever floats your boat. Next time I will probably spice it up a little bit more though.
