Enfrijoladas
Sorry I don't have pics and stuff.
Basically, you puree beans, add seasoning, then layer the gravy with corn tortillas and cheese.
I've been taking these to work for lunch and I don't even fold the tortillas. I just layer it all up in a pyrex dish.
It goes like this:
Puree beans with stock/liquid, garlic, canned chipotle peppers.
Quick fry some corn tortillas.
Cut up some cheese, chop onions and cilantro.
To assemble:
Put gravy in dish,
add a tortilla,
sprinkle with cheese, onion, cilantro
add gravy,
repeat.
Kind of like a bean enchilada.
