Oyster Dressing
[size=12pt]Oyster Dressing just like Grandma used to make :bow:
1/2 cup butter
4 tbs. chopped parsley
½ cup chopped onion
½ cup chopped celery
4 cups crust-less white bread crumbs (or cornbread crumbs)*
1/8 tsp. poultry seasoning
¾ tsp. salt
¼ tsp. pepper
½ tsp paprika
2 cups chicken stock or oyster liquid
3 eggs, well-beaten
1 pint oysters, drained and chopped
* White Bread makes a more moist dressing than the cornbread.
1. Melt butter and sauté chopped vegetables.
2. Add bread crumbs and seasonings and mix thoroughly.
3. Add chicken stock or oyster liquor and beaten eggs.
4. Cook mixture a few minutes longer.
5. Preheat chopped oysters for 2 or 3 minutes in hot butter and add them to mixture.
6. Bake at 400 F for about 15 minutes.
This may be used with chicken or turkey; makes enough for a 4-lb chicken. If you wish to use as stuffing for a 10 15 lb. turkey, make three times the above recipe. [/size]
