    Deer Sausage

    Anybody got a good deer sausage recipe (patty)? I grind my own deer burger but have never made any sausage. I want to try making some for patty sausage, and try different recipes and find one that I like before making link.

    20# deer 5# pork fat 5oz salt 2oz sage 2oz crushed red pepper.for a little more heat add 1oz black pepper.run 1st seasoned batch coarse then run again med blades

    For the money you can't go wrong with LEM seasonings. Out of Ohio but Bass pro and I think Cabelas carry it in the stores or online. One year made 325lbs of assorted sausage in one afternoon....Summer, breakfast, slim jims, brats, polish, Italian...the list goes on and on. One of the very few perks of owning/managing grocery stores is an in-house meat dept!!!!

    Ditto on LEM. I use bulk bacon "ends and pieces" for the fat in my sausage. It is usually really cheap and gives a smokey flavor to the sausage.

    Try going to your local grocery store, IF they have not gone to "boxed" (cut, gassed and packed in another state) meat and ask them to save some trimmings. Most meat comes in now with very little fat on it but most shops are OK and happy to give you the trimmings.
