Pecan-crusted Spanish
Cut spanish into chicken finger sized strips.
Throw some pecans into a food processor until they are finely chopped and place in a bowl
Put flour into another bowl and add salt/pepper.
Make an egg wash in another bowl.
Coat a large pan with oil/butter mixture and put on medium heat.
Coat spanish strip with flour/salt/pepper.
Dip the strip into egg wash.
Coat the strip in the pecan powder.
Toss into the pan and flip before burning the pecan coating.
Remove from pan, place on a paper towel, and then enjoy.
