Crappie parmesan
This recipe originated on the crappie.com web site. I tried it tonight using a couple of mangrove snapper filets and it was great.
1 egg beaten
1 pyrex dish sprayed with olive oil
1/2 cup italian bread crumbs
1/4 cup parmesan (or mixed Italian grated cheese)
Your favorite fish spices (Cajun and granulated garlic for me)
1/4 cup olive oil or melted butter.
preheated oven 450 to 500 degrees based on filet thickness
dredge dry filet through beaten egg
Press filet into seasoned bread crumb cheese mixture both sides
place in pyrex dish and drizzle olive oil or butter over filets
bake 12 to 15 minutes depending on filet thickness
serve with green salad, whole wheat role, tartar sauce lime wedge
and accompany with a glass of red wine.
I added a few sliced kalamata olives over the filets for taste and color.
I believe any type filets would work well with this treatment.

I might have to try this. Got some slabs I've been trying to figure out how to cook besides frying.

I had it again tonight. GREAT . The filets were hand size so 12 minutes cook time was enough.

It would be fun getting hand size of fillets
I’ll be sliding into town March 10-14. Can you have it warm and sunny for me then? And also, how about having the fish biting??? :D
