Hello everyone,
This may, my wife and I are planning a little trip to Dauphin Island. We typically go once a year and I do a little fishing for salt water cats. This trip I will do that, but I also would like to broaden my horizons. I am interested in catching sheepshead and flounder. We will be staying in our aunt and uncles rental house on Port Royal and that is where I typically do my fishing. Do you guys have suggestions on rigs and bait for these two fish. Any advice would be appreciated!

May in that area should see an influx of white and speckled trout around the dock lights at night.
Fish live shrimp or small (1"-3") soft plastic lures (Zoom Fluke, Fin-S, DOA or Gulp shrimp).
Good chance for flounder too.
That's a little late for sheepshead IMHO.
Will you be on the Mississippi Sound side or Lafitte Bay?

I typically use circle hooks for my other fishing (cats and sharks), should I invest in other hooks, or are those okay to use for the flounder and other fish?
We're right at the mouth of the Bay.
Kahle hooks are hard to beat. They are like a hybrid circle hook.
Bull minnows or small mullet should work on the flounder.

The house isn't far from you at all! Its on the left, just at the mouth of the bay.
My uncle tells me there are flounder all over the place there, but I've never had the knowledge of how to catch them.

Try bouncing jigs or small baitfish on a carolina rig along the bottom around the docks & piers or other structure. That is how I catch flounder when I target them.
If the dock has lights on every night you should be in bidnezz ;-)
The flounder creep around the pilings but especially like dropoffs near the lights.
I caught this 5#r a few years ago on a 3" Gulp Shrimp on a 1/4 oz jighead...

That's an awesome catch! I'll be happy with anything, but it would be amazing to catch something like that. The dock has lights, and that is where the uncle says they are, so that's where I'll probably spend most of my time!
